Vinny's Striper Recipe
At least 1/2 hour for marinade
Striped Bass fillets, salt, pepper, lemon juice, olive oil, parsley, garlic, butter.
Marinate striper in gallon sized zip lock bag for at least 1/2 hr before grilling. Salt and pepper both sides of fillet after removing the skin. Then just use equal parts lemon juice and olive oil. Throw in some parsley for color. You can add red pepper flake if you want to kick it up a notch.
Chop two to three cloves of garlic. Saute the garlic in a frying pan without burning. Melt a stick of butter into garlic. This garlic infused butter will be brushed over fillets as you are grilling them. Be very generous with the butter. The fillets will soak it right up.
Lay tin foil down flat on your grill. Cook striper meat for 6-7 minutes on both sides, on low/med heat. Brush with garlic butter often. Check the thickest part of fillet to see if it is cooked all the way through. The tail piece will cook faster because it is thinner.
Serve with rice and baked beans. A summer brew or white wine goes great as well.
