| Ingredients: | 1 ripe avocado 1/4 cup mayonnaise 1 teaspoon cajun seasoning 8 slices toasted bread 1 cup arugula 8 ounces smoked trout, sliced 8 slices bacon, cooked crisp 8 slices tomato |

| Directions: | Mash avocado, mayonnaise, and seasoning together in a small bowl. Smear over 4 slices bread. Top with arugula, trout, bacon, and tomato; place remaining 4 slices bread on top. Cut in half on the diagonal; serve. | |
| Other Notes: | No idea what it tastes like. Just saw it in a cookbook I had out at dinner. | |
