Grilled Bluefish Recipe for Bluefish
Mile or cream
Soak your fillets in milk or cream for about half an hour. Place the fish on your grill (skin down), spread some butter on top, then place a few sprigs of fresh tarragon on top and a generous squeeze of fresh lemon. Grill until it is done to your liking (dont flip it), remove the tarragon before serving.
Tarragon is an interesting herb, but take off the pieces you cooked with (it gets all wilted and dried looking) and garnish with a fresh sprig.
