5 - 10 minutes
tortilla chips (Santinas) 1/2 a cup per fillet
Self rising white flour . 1 cup per fillet
Old Bay Seasoning - 1/2 tablespoon
Black pepper - to taste
salt to taste
cayenne pepper (optional but very good)
2-3 large eggs
Muddle or crush tortilla chips into a near powder,
mix all dry ingredients together.
beat the eggs to create an eggwash in a separate bowl.
dip the fish in the egg wash and roll in flour mixture until fully coated .
Deep fry at 350- 375 until the breading turns golden brown and the fish flakes apart.
This is not just for bass It will work for any frying fish or anything even chicken and shrimp.
