Ingredients: 1 cup Pancake Mix (the kind you just add water to) - 2 eggs - 1/3 cup corn meal - 2 tsp. lemmon juice - 1 tsp. salt - pepper to taste
Directions: Mix all ingredients together then add milk untill the consistency is to your liking.
I like mine rather thick to give a good batter coating that stays on the fish.
Other Notes: After you are done battering fish the leftover batter makes great hush puppies by adding some chopped up onion.
